Kieran O'Connell is the Owner and General Manger of the
Corkman. Kieran is from Coachford, County Cork and has a long
history of Pubs and Irish Music. Kieran came to Australia in 1982
and has always lived in Melbourne. He played Gaelic football with
Young Irelands and Saint Kevin's and represented Victoria in
Hurling in 1986 at the Australian Games.
Stacey Moore has been at The Corkman since April 08 and
is a fantastic addition to our team. Stacey was promoted to Manager
of the pub when Mark Lennon left us to return to Ireland. She is
fondly known by the regulars as "The Star of the County Down" and
we are hoping she will be with us for a long long time at The
Corkman.
Graeme Mundie comes to us all the way from Edinburgh in
Bonnie Scotland, Graeme is the other Chef at the Corkman and since
joining the team has helped us achieve greater acclaim with his
interesting dishes. Our food has earned us a lot of good and
positive feedback and we certainly have a very strong team with our
two Chefs.
Patrick Byrne is the
second chef in the Corkman kitchen Pat comes from Wicklow or as
they say in Ireland "Wickla" he brings a wealth of experience in
kitchen management and is a fantastic addition to our small but
excellent team.
Karen Casey from the
Banner County, County Clare has joined us most recently and is
another great addition to the gang she is 2 IC to Stacey and
together they make a formidable pair. Karen plans to do some
travelling around Australia but we will try and hang on to her as
long as we can.
